Cheese Bread

This recipe makes a very pretty loaf with a nice crumb.  The loaf in the picture is made with white cheddar, but yellow cheddar could be used for more color.  An addition of finely chopped jalapeño pepper could be fun and make for a nice sandwich bread.

Ingredients:

  1. 1 cup milk
  2. 1 ½ tablespoons butter 
  3. 3 1/3 cups all-purpose flour
  4. 1 tablespoons sugar
  5. 1 ½   teaspoons salt
  6. 1 package dry yeast (7 grams or 2 1/2 teaspoons)
  7. 1 egg, beaten
  8. 2 cups shredded cheddar cheese

Directions:

  1. Combine milk and butter and heat to scald over medium heat.  Cool to lukewarm.
  2. Meanwhile, combine 1 cup flour, the sugar, salt, and yeast in a large mixing bowl.
  3. Add cooled milk mixture to flour mixture and beat until blended.
  4. Add 1 cup flour and beat well.
  5. Sir in the egg, cheese, and remaining flour.  Beat to combine.
  6. Turn dough out onto a floured surface and knead until the dough is smooth and elastic, about 3-4 minutes.
  7. Place in an oiled bowl turning to coat the top of the dough.
  8. Cover and let rise in a warm place, free from drafts, until doubled in bulk.
  9. Punch down dough and place it into a greased 9x5x3 inch loaf pan.  
  10. Cover and let rise in warm place, free from drafts, until doubled in bulk 

Preheat oven to 375 degrees and place rack in middle oven

Bake for about 40 minutes.  Remove loaf from pan at once and cool on a wire rack.
