Cucumber yogurt salad

Taking advantage of the fresh cucumbers available in the farm stands of the area, this is a refreshing salad with a nod to the Greek Tzatzik.

Ingredients:

  1. 2 cups sliced and seeded cucumbers
  2. 2 Tbsp. chopped mint & dill leaves
  3. 1 garlic clove, minced
  4. 1/2 cup plain yogurt
  5. 1/2 tsp. salt
  6. 1/4 tsp. pepper

Directions:

  1. Peel the cucumbers, slice, and scoop out the seeds using a scooping utensil or a small spoon.
  2. Chop the mint and dill and dice the garlic.
  3. Mix all ingredients and refrigerate for at least an hour to let the flavors mix.
