Ras el Hanout

Ras el Hanout comes to us from North Africa.  If you want your cooking to have a Moroccan slant, then use this spice mix.  It is not too far removed from the Indian Garam masala.  For more about Ras el Hanout from Wikipedia.  Click HERE

Ingredients for my version of Ras el Hanout:

1 teaspoon coriander seeds
1 teaspoon fennel seeds
2 inch piece of cinnamon
2 teaspoons peppercorns
1 teaspoon ground nutmeg
1 teaspoon cardamom seeds
1/4 teaspoon ground mace
2 teaspoons ground ginger
2 bay leaves, crumbled
1/4 teaspoon red pepper flakes
1 teaspoon cumin seeds
1 teaspoon whole allspice
1/2 teaspoons whole cloves

Directions:

Put all ingredients into a spice grinder* and grind to a fine powder.

*I use an old coffee grinder!
