This is one of the salads we had at the National Gallery
Ingredients:
- 1 cups of quinoa
- 2 cups of water
- oven roasted root vegetables
- maple mustard dressing
Directions:
Follow the package direction for preparing the quinoa. Although the basic preparation is placing the quinoa in boiling water and then simmering the mixture until the water is absorbed, there are many brands of quinoa and it is best to follow the directions given with the particular brand of quinoa used.
Use previously prepared roasted winter root vegetables (click to find recipe in the blog) and toss with the cooked quinoa.
Add 2-4 tablespoons of maple mustard salad dressing (click here to see recipe) according to taste.
