This recipe is fast , easy and because it is finished in the oven, it goes well with “little square potatoes” and baked broccoli.
Ingredients:

1 pork tenderloin

1 Tbsp. butter

salt & pepper
Pre-heat oven to 425 degrees

Pork tenderloins are usually sold vacuumed packed in twos. This recipe uses one. Reserve the other tenderloin a couple of days and make a stew with it. Or, double the recipe and feed a bigger crowd than usual.

First pre-heat the oven and then heat a heavy skillet which can be placed in an oven to medium high heat. Add butter.

As butter melts, salt & pepper the tenderloin.

Brown one side of the tenderloin and then another for about 4 minutes each side (8 minutes).

Place the tenderloin in the oven and bake for 12 minutes.
Suggestion: The timing of making “little square potatoes” and baked broccoli is along with the tenderloin is perfect. While the roast is cooking for 12 minutes, prepare a salad and you will have a complete meal.
Suggestion for left-overs! In our small household we have part of the tenderloin left over which I cut into thin slices to make sandwiches or serve on a salad of greens. The illustration a salad with pork tenderloin slices and avocado is dressed with thousand island dressing.
