Portuguese Marinade for Pork

This recipe comes from the Minho region of Portugal which is right under Galicia, in Spain.  It appears in our recipe for pork stew, Rojoes à cominho on this blog, .  For a link to the recipe, clink HERE

Ingredients:

  1. 2 tablespoons cumin, toasted & ground
  2. 1 1/2 tablespoons minced garlic
  3. 2 teaspoons freshly ground pepper
  4. 1 teaspoons salt
  5. 1/2 cup chopped fresh cilantro
  6. grated zest of 1 lemon
  7. tablespoon lemon juice
  8. 1 cup dry white wine

 

Directions:

I am a great believe in lightly toasting my seeds before I grind them, so I suggest that the cumin be lightly toasted and ground before combining it with the rest of the ingredients.
