Avocado Shrimp Salad

This is a main dish luncheon salad.  The use of Thousand Islands dressing makes it a bit retro!


  1. 2 cups water
  2. juice of one lemon
  3. 1 teaspoon salt
  4. ½ lb shrimp
  5. 1 avocado
  6. 2 cups arugula
  7. Thousand Island dressing*


  1. Fill a bowl with cold water and ice.
  2. Add the lemon juice and salt to the water and bring to a boil. Add shrimp and cook for 1 ½ minutes.
  3. After 1 ½ minutes, drain shrimp and dump into the ice water.
  4. Peel and slice avocado. Set aside.
  5. Peel shrimp and set aside.
  6. Place 1 cup arugula each on 2 plates. Arrange avocado and shrimp on the arugula.
  7. Drizzle Thousand Island Dressing on it, to taste.
